I’m excited to share this taco recipe. I’m always on a quest to find the quick and yummy recipes that will allow me to feed us but also have our free time.
If you want to make it quicker you can meal prep ahead of time and have your chicken ready (tacos then would only take you 15 minutes to make). Check out my meal prep posts to see how you can save time and money.
I use my InstaPot as much as possible and it’s what helps me quicken my meals.
To prep the chicken: Pat it dry, season it with salt and pepper, drizzle olive oil on the bottom of the pot and place the chicken in. Lock it and and cook the chicken. While you wait for the chicken to cook. Cut the peppers & onions lengthwise. Place them in a pan with a tbsp of butter. Cook them until soft and set them aside. Pull the chicken out and cut it in strips. Put the cut chicken in the pan, season to taste, and mix as you warm it up. I like serving everyone at the same time so I love using the electric griddle to warm up the tortillas at the same time and be able to serve all the plates together.
Store-bought seasoning tastes delicious, but it can be loaded with additives and flavor wise, nothing compares to homemade taco seasoning! I like using these cute little jars for my spices.
